Provisioning for pirates is the same as for nationals.
Lots and Lots and Lots of buildings. All (real) ships use provisioning kits weather its built in a shipyard or a careening yard.

I had a go at solo provisioning near the end of OB, just to try it out. The trick is collecting the necessary stuff over a long time - or finding them cheap in AH of course.
Meat, Cured I had plenty from my earlier leather-from-livestock production. (It's a side product, or the Beef required for cured meat is.) I had also made oak logs and oak blocks to sell, with some barrels on the side. Fish I had looted and found in AH in the small amounts it takes. For rum and wine I made (inefficient) production lines. (I'm not sure if these structures were up at the same time or rum first and wine second.) Wheat I grew and milled myself, turning some into hardtack. The same general plantations could've made a little maize for the necessary small amounts of cheese if I hadn't had some left over from my leather production. I had them make some beans early on. I was determined to try out my own wine production. In retrospect I'd probably save myself some trouble by getting it from eurotraders with rum or sugar, or become mostly a wine producer. It was my last bottleneck though and after getting wine going I was making several provisions per day with materials in stock to continue at least a week or two. Anything 10 people can do in a day, 1 person who wants to go through a lot of trouble can do in 10 days. (Preferably measured in weeks due to upkeep periods.) The downsides are a big upfront investment into raw materials and items manufactured on the way, and the cost of tearing down and building structures (compared to just paying weekly upkeep). The building cost can be spread across more units by planning to produce one ingredient for weeks at a time, but this could lead to only seeing profits from the first end products in 1-2 months. And needing to invest more money before getting profits too. In a stable economy, choose what you're going to produce and make what you consider the key materials, then buy the rest.
