Default Understanding Ship Data

I've been playing the game for a little while now but have realised that I don't really understand some of the ship data. So I'm kind of choosing ships half blind. Is there a handy explanation guide anywhere?

Some things are obvious.. damage, range, max speed... the bigger the number, the better!

But I don't really understand:

acceleration - does a big number mean fast acceleration? Or does a small number mean you reach top speed in a small amount of time (i.e. fast acceleration)?

deceleration - Same as argument acceleration.

turning(fast) - don't really know how to read this.. I'm assuming a big number means you turn more sharply.

turning(slow) - Same as turning(fast) I assume.

Modifiers... I see these exist for Sails, crew, bow, stern and sides... and each of these has a Off / def / res value... but what do they mean.

Turning acceleration / deceleration - how does this differ to normal acceleration/deceleration?

Acceleration is a measure of how fast your ship speeds up, so the larger the number the better your acceleration is.
Deceleration is kinda the same, but I don't really understand it myself, I just know I can never get an Abaddon's Will to stop where I want it to, nor a Defiant.
Turning Fast, a measure in degrees (correct me if wrong please) of how many you can turn at 90% of top speed or higher.
Turning Slow, A measure in Degrees of how fast you can turn at 25% or less of top speed.
Modifiers
Offensive Modifier Cannon accuracy will be reflected here.
Defensive Modifier Any skills you are using like Defense 2 or a Defense All item will show their bonus here
Resistance is basically damage resistance of a certain part of the ship, crew included, all of these values of modifiers can be positive or negative due to debuffs, skill usage and outfittings.

Turning Accel/Decel, I'm actually not sure on those so I'll refuse to speculate.
